The first fresh fruit of the year is always mouthwatering.


1 cup of strawberries provides you with:

Enjoy fresh strawberries in salads, desserts and snacks

Mom's Strawberry Pie

4 cups sliced strawberries 3/4 cup white sugar
3 tbsp tapioca 1 tbsp. lemon juice
butter or margarine

Mix together strawberries, sugar, tapioca, and lemon juice. Pour into unbaked pie crust. Dot with butter or margarine. Cover with pie crust. Bake at 400° for about 50 minutes.

Strawberry Meringue Mountain

6 egg whites 1 1/2 cups sugar
2 envelopes of dessert whipping cream mix 1 quart strawberries
or 1 to 2 cups of whippng cream
with 1 tbsp. of sugar and 1/4 tsp. vanilla

Beat egg whites until stiff. Gradually add sugar, continuing to beat until stiff peaks. Place wax paper on cookie sheet. With meringue, make 2 circles or 2 squares. One circle or square is bigger than the other. Make meringue about 1 inch thick. Bake at 300° for 60 to 75 minutes or until slightly browned. Cool.

(Instead of big circles, I have made numerous small circles)

Make whip cream. Hull strawberries. Remove wax paper from meringue. Place largest meringue piece on serving dish. Cover with whip cream and then a layer of strawberries. Place smaller meringue piece on top. Cover with whip cream and a layer of stawberries. Serve immediately.

Dad's Strawberry Shortcake

2 cups flour 2 tbsp. sugar
3 tsp. baking powder 1/2 tsp. salt
1/2 cup butter or margarine 1beaten egg
2/3 cup milk

Mix together flour, baking powder, sugar and salt. Cut in butter until mixture is coarse.

Combine milk and egg. Add to dry ingredients. Stir until moistened.

Knead gently on a floured surface for about 30 seconds. Roll to 1/2 inch thickness. Cut out shortcake.

Place shortcake on ungreased baking sheet. Bake at 450° for 10 minutes.

Hull as many strawberries as you desire. Cut up. Mix with sugar and allow juice to form.

Cut shortcake in half. Fill with strawberries. Place top on shortcake and cover with more sweetend strawberries and juice.

Top with whip cream.

Mom's Strawberry Freezing Instructions

Hull strawberries. Cut in half or to whatever size you want. Do not cut small berries - leave whole. Add 1 cup of sugar to every 7 cups of cut up strawberries. Mix and let sit for about 5 minutes, until there is a small amount of juice formed. Place into containers to freeze. Freeze immediately.
